The Secret to Crispy Tofu (with Cats Watching Closely)

There’s something deeply satisfying about making perfectly crispy tofu at home. That golden, crunchy exterior giving way to soft, flavorful tofu inside—it’s enough to make you feel like a kitchen wizard. Of course, in my house, the real magic isn’t just in the food; it’s in the audience. My cats, ever hopeful, keep a watchful eye as I cook, convinced that at least one tofu cube will somehow belong to them.

Why Tofu Deserves the Spotlight Tofu is a kitchen chameleon—it soaks up flavors, works in all kinds of dishes, and can be transformed into a crispy, savory delight with the right techniques. But achieving that perfect crunch? That takes a little know-how. Here are my best tips for crispy tofu perfection (with occasional cat-related interruptions see video below :).

Press! Tofu is packed in water, and moisture is the enemy of crispiness. Before anything else, press your tofu. You can use a tofu press, but I prefer the DIY method: wrap the tofu in a clean towel or paper towels, place it between two plates, and weigh it down with something heavy (like a cast-iron skillet). Let it sit for at least 15 minutes. This is usually when my cats start circling, sensing that something food-related is happening.

Cube It Right Cut your tofu into evenly sized cubes or rectangles. The more uniform they are, the more evenly they’ll cook. 

The Secret Ingredient: Cornstarch or Nutritional Yeast: Once your tofu is dry, toss it in a light coating of cornstarch. This is the magic trick that creates that irresistible crispy crust. Add a pinch of salt and any seasonings you love. 

The Right Cooking Method You have a few choices:

  • Pan-frying: Heat a generous amount of oil in a nonstick pan over medium-high heat and cook the tofu until all sides are golden brown. 

  • Baking: Toss tofu in a little oil, spread it on a baking sheet, and bake at 400°F (200°C) for about 25 minutes, flipping halfway.

  • Air-frying: My favorite shortcut! A quick 12-15 minutes on each side at 400°F (190°C) gives you crispy tofu with almost no effort.

Sauce Wisely Crispy tofu is amazing on its own, but it truly shines when tossed in a good sauce. Just make sure to add the sauce right before serving so your tofu stays crispy. Meanwhile, my cats have completely lost interest and moved on to napping. Typical.

Final Thoughts (and a Few Cat Hairs) Cooking tofu is an art, and cooking tofu while being judged by your cats is an added challenge. But in the end, it’s always worth it.   • 1 Mixing bowl
  • Parchment Paper
  • 1 Air Fryer Basket or Pan
  • Spatula

Ingredients
  

  • 1 Block of Extra Firm Tofu
  • Olive Oil Drizzle enough to coat
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tbsp Onion Powder
  • 1/2 tbsp Paprika
  • 1-2 tbsp Nutritional Yeast or Cornstarch

Additional Finishes

  • 1/4 Cup Parmesan Add with 5 minutes left
  • 1/4 Cup Gluten Free Panko or Bread Crumbs Add with 5 minutes left and spray with olive oil

Instructions
 

  • Preheat the oven to 400
  • Wrap tofu in paper towels and press excess moistrure
  • Dice tofu into uniform 1" cubes
  • Toss tofu in olive oil, add other ingredients and toss
  • Lay in a single layer on a baking sheet
  • Bake 15-20 minutes, adding additional ingredients near the end of cooking
  • Whisk together a sauce (if desired)
  • Enjoy!
